True Tequila Taste Test

sofia and jim

Sofia Partida and Jim White

The old college ritual of throwing back as many Tequila shots as possible, with copious amounts of salt and lime, are gone, thankfully.  Premium producers like Partida Tequila prefer that you savor their delicious creations one sip at a time.  Sofia Partida joins us to take us through the process with all of her family’s Tequila styles on “Wining and Dining with Jim White”.  It’s the program devoted to introducing you to the people who create the flavors you love.  Listen to the “theatre of the mind” podcast version of our tasting here or at iTunes.  Watch Sofia guide me (and you) through a tasting on VOKALnow.com, YouTube and Vimeo.  Salud!  And, remember.  If anybody asks you what you’re making for dinner…tell ’em reservations!  (You might start, or finish, the evening with a Riedel snifter of premium Partida Tequila!)

New Zealand winemaking at its best

Hamish Clark Saint ClairHamish Clark, senior winemaker, for Saint Clair Family Estate in New Zealand is our guest on this week’s “Wining and Dining with Jim White” on VOKALnow.com.  This hail-fellow-well-met, and former scientific investigator in the UK (their equivalent of our CSI), has enjoyed making one of New Zealand’s premier Sauvignon Blancs for over 20 years (along with a host of other great wines in the Saint Clair portfolio).  Get his take on the evolution of the wine industry in New Zealand, with a specific focus on his winemaking region in Marlborough on this week’s episode.  Many years ago, another winemaker told me that New Zealand was a “bottle of wine and three movies away from the states, or if you prefer, a movie and three bottles of wine”.  Join us as Hamish Clark brings New Zealand much closer on your favorite digital device.  Welcome to the program devoted to introducing you to the people who create the flavors you love.  Catch all of our episodes on VOKALnow.com, YouTube, Vimeo, and iTunes.  And, remember.  If anybodys asks you what you’re making for dinner…tell ’em reservations!

Savor sublime flavor and hospitality

Charlottesville - Kirsty Harmon Blenheim Vineyards

Kirsty Harmon, Blenheim Vineyards with Jim White

Join us for a quick romp through Virginia wine country in the foothills of the beautiful Blue Ridge Mountains on “Wining and Dining with Jim White” on VOKAL.  We only had two days to visit!  Two weeks or even a lifetime is better when you visit a place as charming and inviting as Charlottesville in Albemarle County Virginia.  There’s more history here than you likely absorbed in your entire formal education (think Thomas Jefferson and James Madison for starters).  For foodies; there’s an amazing wine industry (growing by leaps and bounds); a host of craft brewers; succulent Virginia apples (yummy cider); and plenty of delicious cuisine from Southern comfort food to edgy New American.  We soaked-in as much wine, food and culture as possible.  So, join us for a quick overview on our show today.  Most people we spoke with started making plans to move to Charlottesville within a short time of discovering all the area offers.  Locals would never dream of moving.   Tour Jefferson’s Monticello and meet the man who is considered the father of the Virginia wine industry.  Get a taste of classic 18th Century cooking at

historic Michie Tavern.  And, hopscotch with us throughout Albemarle County to taste wines at Jefferson Vineyards, Blenheim Vineyards (Dave Matthews fans you’ll love hearing about his winery), the winery with the Presidential seal of approval (and ours) that makes some delicious sparkling wine, and more!  It’s food, wine, history, hospitality, and more.   And, like we say, if anybody asks you what you’re making for dinner, especially in Virginia, tell ’em reservations!

Here’s a quick rundown of more places we visited so you can get information:

Chef Lidia Bastianich and the Art of Mozzarella

World-famous Italian chef and cookbook author Lidia Bastianich recently visited her good friend and renowned cheesemaker Paula Lambert at the Mozzarella Company in Dallas.  As Paula is wont to do, she got Lidia involved in a delightful hands-on session of Mozzarella making.  You’re an eyewitness to the private demonstration as Jim White’s “Have iPhone Will Travel” series takes you front and center.  Buon appetito!
